BUTTERED BROCCOLI & CARROTS

WHAT YOU NEED
1 cup of broccoli florets
1 cup of carrots (or use baby carrots instead)
1 small clove of garlic (peel and chop finely)
3 tbs butter
2 tbs virgin olive oil
Salt & pepper for seasoning
WHAT YOU NEED TO DO
1. Chop the broccoli and carrots into bite size and wash it.
2. Put the chopped carrots and garlic into a large bowl and cover it with water.
3. Wrap the bowl with plastic wrap and pop it in to the microwave for 7-10 minutes or until the carrots are soften. (If you prefer the carrots to be slightly crunchy, 5-6 minutes will do)
4. Next is the broccoli. Broccoli cooks faster than carrot. Using the same method, pop it into the microwave around 5 minutes until the colour turns to fresh green.
5. Discard the water in the bowl. While the veges are still hot, throw in the butter and give it a stir. Make sure the butter is melted.
6. Add in VOO bit by bit for umph! And season it with salt and pepper accordingly. If you are using salted butter, make sure to taste the veges before adding salt.
