RUSTIC BUTTERY MASHED POTATO

Pair this mashed potato with your easy peasy Pan Chicken Fillet or your salt & pepper steak or simply on its own for snacking! You might want to hide a huge portion for yourself because this mash will instantly disappear when it's on the dinner table.

WHAT YOU NEED

5-6 medium size potatoes (3-4 for large size potatoes)

100g butter

1 clove of garlic (roughly smash with the back of your knife)

1 tbs chives (optional)

3 tbs virgin olive oil

Salt & pepper for seasoning

WHAT YOU NEED TO DO

1. Cover the potatoes with water preferably in a deep pot.

2. Sprinkle around 1 tbs of salt and drop the garlic.

3. Let it boil until the potatoes are soft and tender. Test it with fork. If the potatoes break easily when you poke the fork in the centre, it's good to go.

4. Once the potatoes are ready, drain the water and quickly add in the butter. Leave the garlic in if you want a slight garlicky flavour. (At this point you can also add the chives but it's totally optional).

5. Mash everything and add olive oil bit by bit. Make sure to taste it from time to time for seasoning.

6. Sprinkle a dash of salt & pepper if needed and feel free to add a more olive oil to make it more creamy.

7. Voila! Done! Take a scoop or two, plate it & enjoy!

Personal favourite: Drizzle a bit more of EVOO when plating. Nothing can go wrong!
